Monsoon Cravings | Whole-Wheat Sweet Pancakes/ Miththa Pooda
When nature breathes a sigh of relief after the sweltering heatwaves,rains make even the most mundane things look fresh, lively and colourful .
Rainy season has been associated with renewal or rebirth and symbolised the hour coming after the bad as washing away the old. I love monsoons as it brings a lot of relief, freshness and greenery all around. And the best part is to grab my cup of tea with my favourite book in my cozy corner and I’m sorted !
Rains also bring about a lot many food cravings and people here in India, go overboard with their taste palettes trying to satisfy their monsoon cravings. But that certainly doesn’t mean to binge on unhealthy snacks. Trust me, I always try and find a healthier version or alternative for such delicacies.
Miththa Pooda or Whole Wheat Pancakes are one such hot snack that is relished across almost all Punjabi households / Northern India. This sweet pancake is a perfect rich dessert that can be paired with your cup of tea or coffee.
I have some fond memories with these sweet pancakes as I remember my mother making them for us during the rainy season. I just used to grab a seat with these on the couch and watch the rain from the balcony.
Authentically, this pancake is a beautiful assortment of wheat flour,sugar,milk and a few spices that add on a warm sweet flavour which is then deep fried in clarified butter/ ghee until it turns crispy and golden brown.
But I have here my own version of this miththa pooda/ Sweet Whole-wheat Pancakes that me and my baby relish and the best part is that I don’t feel guilty as there is ‘NO’ sugar or frying involved in this.
I made these ultra soft and a healthy version of Miththa Pooda / Whole-Wheat pancakes today morning for breakfast to acknowledge the beautiful rainy weather along with my cup of tea. Indulging in this gooey & yummy hot snack is so comforting when it’s pouring outside.
COOKING TIME : 10 minutes
PREP TIME : 10 minutes
TOTAL TIME : 20 minutes
SERVING : 4 pax
1 cup whole-wheat flour (atta)
1/2 cup powdered Jaggery or 1/2 cup organic honey
2 tsp fennel seeds (saunf)
1/2 tsp black peppercorns
1/2 cup skimmed milk
- In a bowl take all the dry ingredients and mix it with milk until the mix is smooth
- Leave the mix in the refrigerator for about 1/2 an hr or overnight (preferably)
- Make sure the consistency is not too thick or not too runny. It should just be like a pancake batter
- In a non stick pan, drizzle a few drops of ghee/ clarified butter/ butter or olive oil and start spreading the mix
- Flip the pancake once you feel its cooked and golden brown from one side
- Garnish it with pistachios, almonds and drizzle some honey (optional)
- Serve hot and fresh
